火龙果干燥动力学及其品质特性分析研究进展
摘要:火龙果是仙人掌科的一种水果,广泛分布在热带、亚热带,其中红皮白肉、红肉果实是具有商业潜力的主要品种,具有降血脂、抗衰老等重要的作用。但新鲜火龙果不耐贮藏,那么制成火龙果干的适合温度和厚度通过什么判断呢?随着国内外干燥动力学研究的深入开展,研究结果表明干燥动力学模型对预测干燥过程具有重要的作用。本文综述前人在火龙果干燥动力学、干燥特性及品质特性分析方面的最新研究成果,为将来优化实际干燥工艺设计提供理论依据。

Advances in Drying Kinetics and Quality Characteristics of Pitaya
Abstract: Pitaya is a fruit of cactus family, which is widely distributed in the tropics and subtropics. Among them, red skin, white meat and red meat fruit are the main varieties with commercial potential, which play an important role in reducing blood lipid and anti-aging. But fresh pitaya is not resistant to storage, so what is the suitable temperature and thickness for making pitaya? With the in-depth study of drying kinetics at home and abroad, the results show that the drying kinetic model plays an important role in predicting the drying process. This paper summarizes the latest research results of predecessors in the analysis of Pitaya drying kinetics, drying characteristics and quality characteristics, so as to provide a theoretical basis for optimizing the actual drying process design in the future.

新鲜火龙果含有大量的水分,而含水率是影响果蔬保藏的一个重要因素,水分含量过高易引起腐败变质,过低影响感官品质[1],故要将其进行深加工而有利于贮藏。火龙果的加工产品主要有火龙果干、火龙果酱、火龙果酒、火龙果醋及火龙果中活性成分提取物等[2]。其中火龙果干的工艺操作相对简便,在火龙果干燥过程中,对含水率的控制至关重要,而在干燥动力学中可以通过一个重要参数就是干燥速率很好地描述含水率变化快慢并且通过干燥介质的流动速度、温度和湿度对干燥工艺进行合理地优化以及一些干燥条件变化的准确预测[1],根据干燥动力学特性建立大量的动力学模型从而能够对干燥的过程进行预测。
